Introduction

The City of Seal Beach owns and maintains the sewer system serving most businesses within the city limits. Under new laws, the City is required to institute a comprehensive grease control program. Grease that enters the sewer system from kitchen sinks and drains, eventually hardens and coats the inside of sewer pipes. Over time, the grease accumulates and can restrict the flow of waste-water in the pipe. This results in sewer spills that can damage to businesses or cause raw sewage to spill into our streets and waterways and can be a significant cause of ocean water pollution.


FOG Manual

As part of the Ordinance and FOG Control program, the City has developed a FOG Manual to assist restaurants and food service establishments on how to comply with the new laws. The manual includes sections on legal requirements, basic components of the FOG program, kitchen best management practices, grease interceptors, public education, permits and enforcement.
